The human nose is thought to identify scents by emitting electrical signals from olfactory cells when scent molecules adsorb to olfactory receptors, and transmitting these signals to the brain.
FlavoTone uses a mechanism similar to this olfactory sense, using scent-responsive materials that correspond to olfactory receptors, probes that detect scents by changes in electrical properties due to adsorption of scent molecules, and analysis that identifies scents from the obtained signal patterns. It is a device that consists of an app and can visualize complex scents. Compared to response materials for conventional scent sensors, it is relatively easy to vary the response characteristics to scent molecules over a wide range, and it is relatively unaffected by external environments such as humidity.
